The first option is to lower the game difficulty to the minimum — this way, you’ll be able to take her down, though it will still require some effort.
The second method relies on having enough damage and positioning. You’ll need to climb to a higher ledge where she can’t reach you, and then simply chip away at her health using a bow or fireballs.

And once you defeat her, you’ll receive the full Umbra set, which you’ll be able to use for a very, very long time.
